White Chocolate and Grape Fruit Sponge

Vit chokladkaka med grapefrukt och kanelfraiche

En enkel men sofistikerad kaka med mjuk konsistens. Kanelfraichen gifter sig fint med syran i frukten och servera gärna ett par färska skivor grapefrukt till!

Ingredienser:
3 ägg
3 dl strösocker
1 tsk vaniljpulver
2 tsk bakpulver
3 dl vetemjöl
1 dl riven vit choklad
finrivet skal från en grapefrukt
75 g smör
1 dl vatten

Kanelfraiche:
2 dl crème fraiche 34%
4 msk florsocker
2 tsk kanel

Garnering:
Filéer av grapefrukt

1. Sätt ugnen på 175 grader och smörj och bröa sedan en sockerkaksform på ca 1,5 L.
2. Vispa ihop ägg och socker riktigt vitt och fluffigt.
3. Blanda samman alla torra ingredienser samt skalet och chokladen och vänd ner detta i smeten.
4. Smält smöret och koka upp vattnet. Blanda snabbt ihop smör och vatten och ha i det i smeten. Blanda ihop allt försiktigt och häll upp i formen.
5. Ställ in formen i ugnens nedre del och grädda i cirka 45 min.
6. Ställ kakan att svalna något och stjälp sedan upp den. Låt svalna helt under formen.
7. Kanelfraiche: Vispa crème fraichen lätt och sikta i florsockret. Vispa detta lite fluffigt och vänd ner kanel.

Servera kakan i skivor med kanelfraiche och garnera med färska filéer av grapefrukt.

Recipe in English:

A sophisticated cake with soft texture. The cinnamon fraiche adds that wow-factor to the acidity in the fruit.

Ingredients:
3 Eggs
3 dl granulated sugar
1 teaspoon vanilla powder
2 teaspoons baking powder
3 dl flour
1 dl grated white chocolate
zest of half a grapefruit
75g butter
1 dl water

Cinnamon Fraiche:
2 dl sour cream, full fat (or Creme Fraiche if you can find it)
4 tbsp icing sugar
2 teaspoons cinnamon

Garnish:
Grapefruit slices

1. Preheat the oven to 175C/345 F and grease and crumb a sponge pan of about 1.5 L.
2. Beat the eggs and the sugar until really white and fluffy.
3. Mix together all the dry ingredients and the grapefruit zest with the chocolate and fold into the batter.
4. Melt the butter and boil the water. Quickly mix together the butter and water, and add it to the batter. Mix together gently and pour into the pan.
5. Set the cake in the lower part of the oven, and bake for about 45 minutes.
6. Set the cake to cool slightly and then flip it over, but let it cool completely in the pan before opening.
7. Cinnamon Fraiche: Whisk the crème fraîche and sift in the icing sugar. Beat fluffy and fold in the Cinnamon.

Serve the cake in slices with cinnamon fraiche and garnish with fresh slices of grapefruit.
